Gotta say it’s good to be back in a live kitchen again — not that where I was wasn’t a working, producing and very good one. But I mean a place where the food that’s made now is served and consumed now and the feedback is immediate. Once TBK and I shook off a little rust and learned which knobs to turn and just how hot the “medium“ settings might be, we were rolling and reveling. It is indeed good to be back, though we‘ll be in fine-tuning mode for a little while. Every place is different.

I stopped by a table toward the end of the evening to ask a couple how things were. The woman had her mouth too full to really talk, but her husband was more than happy to give me his opinion on what we “ought” to be doing to bring in a crowd. I looked around and noticed every table was full and told him to go ahead. Continue reading »
